Von Ebert Brewing Increases Production and Expands Distribution

Finally able to meet demand, the brewery is now spreading its wings. Introduces a new member of its regular lineup.

Van Ebert Brewing’s Volatile Substance IPA won a gold medal for American IPA at the 2021 Great American Beer Festival (GABF). That prestigious distinction created intense demand for that one beer. That’s a good thing, right?

The heightened demand for Volatile Substance IPA also created a challenge for Portland-based Von Ebert Brewing, which wanted to continue flexing its creative muscles and also expand distribution, but found itself painted into a corner. The brewpub was initially founded in 2016 on the idea of bringing German-style lagers to the Pacific Northwest; still, nobody should complain about earning a gold medal in one of the GABF’s most hotly contested categories.

“And since then, we’ve never caught up,” Von Ebert Brewing’s head brewer, Sam Pecoraro, told Brewbound in a recent article. “Part of that is because we were in small pubs and being able to supply our distributor out of two small pubs wasn’t working. I think we shorted every order for three years.”

The brewery is now in a position to catch up, and then some. This is due to the addition of a new brewing facility, which is allowing the brewery to increase production from 4,000 barrels per year to as much as 20,000 barrels per year. In fact, the brewery is already halfway there. That facility opened earlier this year. It has allowed the company to expand the distribution of all its beers throughout Oregon, Washington, Colorado, California, and Japan.

“Von Ebert Brewing has always wanted to add a West Coast IPA to our lineup, but demand for our other offerings was so high, we didn’t have the capacity until now with our new N. Mississippi space,” said Pecoraro in a press release. “In the spirit of ‘Where Tradition Meets Evolution,’ we wanted to create a West Coast IPA, Reverse Math, that’s the opposite of Volatile Substance Northwest IPA to provide variety for our IPA customers. Utilizing pilsner malt and a more modern hop combination, Reserve Math West Coast IPA gives high intensity aroma and flavor of red berry, sweet fruits, strawberry and guava, all in a crisp and dry profile that defines modern West Coast IPAs.”

Von Ebert Brewing just released its 2026 beer release calendar, which includes something new: Reverse Math West Coast IPA. The rest of the core lineup remains: Volatile Substance NW IPA, Sector 7 Hazy IPA, Pils (a German-style Pilsner), Clubhaus Lager, Drink Me Potion Raspberry Tart Ale, and Waning Echoes American Stout.
