Stout: A New Beer-Focused Restaurant Coming to Capitol Hill

About seven years ago Paul Reder took over the failed Planet Hollywood in downtown Seattle and transformed it into the second Tap House Grill location. Now Reder plans to open another beer-focused establishment in Seattle.

The Capitol Hill Seattle Blog reports today that Paul Reder plans to open Stout, a 5,700 square-foot restaurant and drinkery in the Sunset Electric building—a big, new apartment complex with retail on the street level located at 11th and Pine.

Reder told the Capitol Hill Seattle Blog that he isn’t planning to offer a massive selection of beer to generate interest, but beer lovers should expect to find plenty of tasty things to drink at Stout. Compared to the Tap House Grill, expect a smaller but carefully curated selection of 20 beers on tap. “I’ve never done anything but the restaurant business,” Reder told the Capitol Hill Seattle Blog. “Beer has been in my family for even longer than that.”
