Ilk Beer opens Ilk Lodge in downtown Olympia

On Saturday, April 27th, Ilk Beer opened its new taproom in downtown Olympia. The plan is to start regular service on Thursday, May 2nd (according to a post on Instagram). The location of Ilk Lodge will seem familiar to many local beer fans. It’s at the corner of Legion and Jefferson in downtown Olympia, the former home of the Fish Tail Brewpub, which shut down some years ago. Just like Fish Brewing, Ilk Beer is creating its product in the building across the street. (Photos from Instagram.)

There hasn’t been a lot of noise about this one away from a couple of posts on Instagram, which is where I swiped the images. “What ya see here is the former Fish Tail Brewpub, now affectionately called @ilklodge; the new home of Carbon Pop and @ilkbeer!!! It’s been a crazy busy year, and I’ve missed seeing your faces and feeding your needs.”

“But what about the burgers? And the brews? We will be opening this Saturday, April 27th, from 11am to 10pm for Arts Walk! We’ll have smashies and brews and some other goodies. Plus, we’ll be showing some of our friends amazing art and live music!”

Like Ilk Lodge’s location, the creative mind behind Ilk Beer will also be familiar to local beer fans. Patrick Jansen worked at two well-known breweries in Olympia. He was the head brewery at Three Magnets Brewing and then was one of the owners at Matchless Brewing. Along with his biz partner, Aubrey “Abe” Burt, Jansen planned to open a tasting room at the brewery, but when the old brewpub became available it was too juicy to resist. Carbon Pop, Jansen’s pop-up burger concept, now has a home; Carbon Pop will provide the food at Ilk Lodge.

If you’ve yet to enjoy anything from Ilk Beer, you’re in for a treat. Everything I’ve tasted has been spot on. That’s not surprising; Patrick has some serious brewing chops. The Ilk Lodge is at 515 Jefferson St SE, Olympia, WA 98501. The brewery is across the street.
