Figurehead Brewing Introduces Something Belgian-Inspired That’s Not Beer

Seattle’s Figurehead Brewing introduces a Belgian-inspired lunch offering at its Stone Way location

Although this news is only beer-adjacent, the fact that the new menu item at the Figure Head Brewing taproom is Belgian-inspired —like some of the brewery’s award-winning beers— gets it a bit closer to the mark. Also, this menu addition highlights how one brewery is adapting and thinking creatively to garner interest and attention in the face of the industry’s current challenges. Figurehead Brewing operates two locations in Seattle: a brewery and taproom in the Interbay neighborhood, and a taproom a couple of miles away on Stone Way North near Lake Union, where you’ll find the mitraillette-inspired sandwich. At the Stone Way location, the taproom shares the space with Midnight Ramen, a nationally recognized ramen restaurant. In devising a new lunch offering, Figurehead leaned into that relationship, working with chef Elmer Komagata, who helped craft the new sandwich.

Mitraillette, which translates to “submachine gun,” in the culinary context refers to a large sandwich commonly served at friteries and cafes. It is also considered one of Belgium’s most iconic street foods. Traditionally, it consists of a fried sausage on a French baguette, covered with french fries and sauce andalouse. 

“We love the award-winning Belgian-style beers that we brew, and we’ve also started serving sourdough Belgian waffles on the weekends,” says Figruehead Brewing’s owner, Bob Monroe. “So when we started formulating a new lunch offering, it made sense to extend that Belgian connection.” 

Figurehead’s version of the sandwich features shredded beef braised in Belgian-style beer, a garbanzo/potato/leek spread on a French roll, and crispy french fries piled high. The house-made sauce andalouse—made with roasted red bell peppers, mayonnaise, and spices—is served on the side. A vegetarian option replaces the beef with a mix of sauteed vegetables.

The new lunch offering will be available at Figurehead Stone Way Monday through Thursday from 11:30 a.m. to 2 p.m. The new sandwiches join the sourdough waffles, which will continue to be available on Saturdays and Sundays from 9 a.m. to noon.  This does not impact Figurehead’s current offerings of smoked brats from Bavarian Meats and soft German-style pretzels from Kaffeeklatsch Seattle: those items are still available during all business hours. 

Figurehead Stone Way is located at 3513 Stone Way N in Seattle’s Fremont neighborhood. It is the company’s second location and opened in 2024. In addition to Figurehead beer, there is an extensive selection of other alcoholic and non-alcoholic drinks—including cider, wine, sake, and cocktails, NA  hop water, kombucha, and draft root beer.
