The Ballard brewery crafted the beers with casks from a locally made Fernet and Chicago’s famous Malört

If you’ve been to Chicago, perhaps someone has convinced you to try a shot of Malört. It is an interesting flavor, to say the least. Malört is one of the spirits Seattle’s Fair Isle Brewing leaned into to create two new beers. The second spirit-forward beer involves Fernet, the popular herbal digestif liqueur. Here is the release announcement introducing the two new beers from Fair Isle Brewing.

Seattle, WA (June 13, 2024) – Next week, Fair Isle Brewing, a Seattle brewery specializing in exceptional lagers and saison beers, will releases Jep and Lario, two beers crafted with spirit casks.

Jep is a saison aged in the world famous Jeppson’s Malört casks. Fair Isle’s Taproom General Manager, Kerri Petric, is a Chicago native and joined the brewery just over two years ago.

“With in the first week of her being here, we all were christened through a Chicago Handshake – a shot of Malört with an Old-Style beer,” said Andrew Pogue, Owner of Fair Isle Brewing. “So, when we were given the opportunity to purchase a few Malört casks, we jumped on it.”

Malört made its debut in Chicago in the 1920s, when Swedish immigrant Carl Jeppson began selling the traditional wormwood-based Swedish-style schnapps also known as beskbrännvin, or besk for short.

Jep started off as a honey rye saison then aged in Malört casks for eight months before packaging. The aim was to create a saison for those Malört aficionados while balancing the distinct bitterness – creating a beer that might convert more skeptics over to Malört. At first sip, the infamous bitterness is soft and hidden, but as the glass empties, it lingers and builds.

To celebrate on Monday, June 17th, Fair Isle will be serving up Chicago Style Dogs and talking all things Chicago!

Lario is a saison aged for five months in Fernet Lario casks from Highside Distilling on Bainbridge Island. Highside Distilling uses Washington-grown apples and a blend of ten different botanicals to distill this local Fernet.

Lario has a huge aroma and notes of mint, anise, pine, smoke and bitter orange peel.

To celebrate the release of Lario, on Tuesday, June 18th Fair Isle has joined up with Project Pizza for the evening.
