Another very special bottle release to tell you about. From the folks at Elliott Bay Brewing:

Time for our January Barrel-Aged Bottle Release:

On Thursday 1/30, Elliott Bay will be selling 95 bottles of our Spontaneous: Cabernet ’17. Each Elliott Bay pub will have one case of 12, with the remaining bottles being available at our Brother Barrel location. $17 plus tax for a 500ml bottle.

For this beer, we knocked out our golden base straight into barrels packed with Washington-grown Cabernet grapes and allowed the native cultures living on the grapes to ferment the wort into beer. The beer then matured in the barrels, on the grape skins, for 8 months before being blended together for release. Beyond their wild culture, the grapes added a light pink hue, noticeable tannin character, and acidity to our beer.

The draft version won a gold medal at the Washington Beer Awards, and we’ve been patiently waiting for the bottle-conditioned version to reach maturity before releasing it to the public.
