Rooftop Brewing crafts a beer exclusively for Cedarbrook Lodge

We’ve just learned that a special beer pairing dinner at Cedarbrook Lodge will accompany the release of this beer. Here’s that announcement.

Join us for an exceptional evening as we celebrate craft brewing at its finest. Unique Rooftop brews, including cellar reserve selections, will be paired with a delicious & fun menu created by Executive Chef Adam Stevenson and his team at Copperleaf Restaurant!

The festivities begin at 6:00 PM with a reception featuring our very own IPA and seasonal small bites. Dinner follows at 7:30 PM and will include four diverse courses with corresponding Rooftop pairings. The outstanding menu is noted below.

Cedarbrook Lodge is something of an anomaly. Located just a stone’s throw from SeaTac International Airport, the lodge is situated on 18 lush acres, making it something of an oasis. The hotel offers a respite from the loud and busy world that surrounds it. For non-travelers, the award-winning Copperleaf Restaurant and Copperleaf Bar & Terrace do the same.

Rooftop Brewing of Seattle, Washington recently crafted a beer exclusively for Cedarbrook Lodge: Cedarbrook IPA. The collaborative project was 13 months in the making. The epiphany came when brewer Craig Christian imagined using Cedrela (Spanish Cedar) to minimize any bitterness. The beer was canned on February 11th and will be available soon. A limited supply of the beer will be available in cans at the Rooftop Brewing taproom on Friday, February 14th.

“Cedarbrook Northwest Style IPA is made with Washington grown, boldly fruity Citra hops and aged on distinctive Spanish Cedar,” says the description on the can. “Inspired while strolling the beautiful grounds of Cedarbrook Lodge, our IPA is uniquely delicious.”

This is an exclusive beer and you’ll need to visit the Cedarbrook Lodge, the Copperleaf Restaurant, or the Copperleaf Bar & Terrace to get it. Otherwise, you can also find it in cans at Rooftop Brewing’s tasting room in Seattle, but supplies are limited.
