UPDATED 2/23/2023 – As Project 9 Brewing gets ever closer to its opening in Seattle, the company announced a food partner: Chef Melissa McMillan and her restaurant Sammich. No official word on an opening date, but when Project 9 finally opens, expect to enjoy a kickass sammich along with your beer. Hopefully, soon.

We’re so pumped to announce that we have partnered with Chef Melissa McMillan and her restaurant Sammich to bring these bomb sandwiches from Portland to Seattle as a PERMANENT food cart located on our lot.”

ORIGINAL STORY
In a nutshell, Project 9 Brewing is waiting on some final inspections and can then start brewing beer. They’re hoping it happens in the coming weeks. Once they start brewing, the opening will happen about a month later. The brewery is located near the corner of NE 80th Street and Lake City Way.

Today, the following update landed in my inbox with more info about the current situation at Project 9 Brewing along with some details about the forthcoming taproom. Join their mailing list here.

Update from Project 9 Brewing

Bad news first.
We’ve been holding off on sending out an email updating hoping top be announcing a grand opening, so let’s get the bad news out of the way. We still don’t have a set opening date.

As we get closer to 2023, it’s crazy to look back at how far we have come. By the time we open, it will have been almost 3 years since we first toured this building with dreams of turning it into (hopefully) one of the best breweries in Seattle. At that time COVID was in the news, but no one was wearing masks yet and we all thought it would pass in just a few weeks.

If someone had told us it would take this long we would have almost definitely walked away, but no one did and here we are! We’ve weathered the COVID shutdowns, supply chain issues, slow permitting, insane cost increases, and non-stop construction surprises.

Good news!
We’re almost there! The brewhouse is installed and waiting to be fired up (more on that in a bit).

The taproom is really starting to look amazing. The bar is complete, we’ve painted, were installing speakers and TVs, hanging artwork, and are assembling tables. Here’s a sneak peek.

One of our favorite things is the backlit sign of our logo behind the bar.

So, what’s the hold up? Just one minor detail, the BEER! Yes, although our taproom is nearly complete, we still have not been able to fire up our equipment. Making beer takes a large amount of power and water. The existing building didn’t have enough of either so we needed to upgrade both our electrical service and water main. Although we thought we started the process on getting these utilities upgraded early enough, we were wrong.

After a 10 month wait, did get our water main upgrade and sprinkler pipes installed a few weeks ago. We are still waiting on a final inspection before we can actually turn it on though. Hoping to have that in the next few weeks.

For electrical, we thought it was supposed to happen last week, but we got bumped after the power outages from the snow last week. Our fingers are crossed that it could happen any day now.

Once we have our water and power, we should be able to fire up the equipment and start testing it. Shortly after that we will start filling our tanks. The hope is that we will open the doors approximately 4 weeks from that point.

Finally, to answer the most common questions that we get asked…

  • Yes, we will be kid friendly.
  • Yes, we will be dog friendly,
  • No, we do not have a restaurant, but we will allow outside food.

One of the things we love about our spot is that we have lots of great food options all around us. We’re also really excited to announce some news about a food option we will have on site. More on this in a future update!
